I’ve had quite an easy day of it today. I decided to eat the remaining plantain for lunch, along with an organic salad including a variety of different leaves and some red pepper. I also sliced up half a non-organic avocado, and drizzled over some organic virgin olive oil with a little rock salt and freshly ground pepper. Doesn’t it look grub-tastic?
The crunch of the pepper felt nice against the soft texture of the plantain and the even softer avocado. It’s not difficult to love a plate of food that’s so full of colour.

For dinner, I heated up the remaining roast lamb from yesterday, and included lots more vegetables including parsnips, carrots and onions. I also drank plenty of water throughout the day.
I’ve got an even easier day tomorrow! I’m meeting friends in Manchester and we’re going out for lunch with drinks afterwards. I’m looking forward to it and of course, wherever we go, I’ll be sure to eat paleo!
